Winter Squash and Lentil Bisque

I made this soup mainly because one of the few proteins I can have on this cleanse is lentils. I changed the recipe a bit because I didn’t have 2 butternut squashes and I didn’t use the cayenne because I wanted my daughter to try it. Here is what I did.

 

  • 1 butternut squash peeled and chopped
  • 2 apples cored and chopped (it called for green apples but I only had fuji)
  • 1 red onion diced
  • 1/2 cup of apple sauce – think I will omit this next time
  • 1 cup of apple juice
  • 1/2 tsp of ground nutmeg
  • 1/8 tsp of cayenne
  • 1 1/2 cups of vegetable broth
  • 1/2 c of lentils

 

Heat squash, apples, onions, applesauce, apple juice, nutmeg, cayenne and 1 cup of broth to boiling in a 3 quart saucepan. Cover and simmer 20 minutes or until the squash is tender.

Place the squash mixture in blender, food processor or immersion blender. Blend until smooth, stir in lentils and remaining cup of broth. Heat to boiling, reduce heat, cover and simmer 25-30 minutes, stirring occasionally until the lentils are tender.

To enhance this meal your can prepare some cheese toast. Using a 3/4 cup of mozzarella cheese, 6 slices of french baguette bread and 1 onion chopped.  Sprinkle cheese on the bread and place in the broiler. Broil bread 3 inches from the heat until cheese is bubbly. Top each serving of soup with bread and chopped onion.

My daughter loved this soup mainly because it was so sweet. To make is less sweet omit the apple juice.

Standard Process Cleanse

So I have again started the SP Cleanse. This is something I have wanted to repeat for the last year but because of various factors in our lives I just haven’t had the opportunity until now. My body could really use the cleanse after the stress of the past year of putting our house on the market, stress of selling it, finding a new home, moving, finding a school for our daughter and generally trying to keep things on an even keel. So ¬†I have not always made the food choices – but then this is life, so that does happen at times.

Today was Day 1 of the Cleanse – I was somewhat prepared because I had shopped for fresh fruit and vegetables but I had not really made any food plan. That is what happens when your girl gets sick and totally upsets the apple cart. So today was a ad-hoc day of trying to make things work.

I did make carrot juice for the first time in my Blend-tec. So easy!!! I used it in my first shake of the day, it wasn’t too tasty so I will try adding different fruits to tomorrows shake with the carrot juice. Since I had a meeting this afternoon, in hopes of getting a food/frontier co-op started, I ate lunch at Panera’s. Yes they have salads but not alot of choice for one not eating meat. So I had a stand chef’s salad – it was big, with lot’s of fresh greens, but the tomato’s we a bit weak, probably because we are in the midst of winter.

I did a little research tonight and think I have some wonderful idea’s for meals tomorrow. So stay tuned.
