Winter Squash and Lentil Bisque

I made this soup mainly because one of the few proteins I can have on this cleanse is lentils. I changed the recipe a bit because I didn’t have 2 butternut squashes and I didn’t use the cayenne because I wanted my daughter to try it. Here is what I did.

 

  • 1 butternut squash peeled and chopped
  • 2 apples cored and chopped (it called for green apples but I only had fuji)
  • 1 red onion diced
  • 1/2 cup of apple sauce – think I will omit this next time
  • 1 cup of apple juice
  • 1/2 tsp of ground nutmeg
  • 1/8 tsp of cayenne
  • 1 1/2 cups of vegetable broth
  • 1/2 c of lentils

 

Heat squash, apples, onions, applesauce, apple juice, nutmeg, cayenne and 1 cup of broth to boiling in a 3 quart saucepan. Cover and simmer 20 minutes or until the squash is tender.

Place the squash mixture in blender, food processor or immersion blender. Blend until smooth, stir in lentils and remaining cup of broth. Heat to boiling, reduce heat, cover and simmer 25-30 minutes, stirring occasionally until the lentils are tender.

To enhance this meal your can prepare some cheese toast. Using a 3/4 cup of mozzarella cheese, 6 slices of french baguette bread and 1 onion chopped.  Sprinkle cheese on the bread and place in the broiler. Broil bread 3 inches from the heat until cheese is bubbly. Top each serving of soup with bread and chopped onion.

My daughter loved this soup mainly because it was so sweet. To make is less sweet omit the apple juice.

So I have been on the Standard Process Cleanse for about a week now. It’s been going pretty good, except now I seem to have developed a phantom gall bladder pain. This is a first for me, apparently the cleanse affecting my non-existent gall bladder. I can’t wait to finish the SP Cleanse capsules. Tomorrow will be my last day for those capsules.

However I have discovered some new meal ideas while doing this cleanse. I googled and found two blogs that had some great recipe ideas, mommypotamus and Dr Cindy Blog.  I love all the ideas, plus my former Chiropractor and friend, Allison shared some great ideas. I tried the Curry Lentil Pizza on Thursday and it was fantastic – love the Indian flavor. Tonight I have roast asparagus and cauliflower popcorn – yum yum.  I am sure I’ll have some more fun recipes to mention later on. But now I am a bit overwhelmed with caring for a few folks – especially since my husband ruptured his Achilles tendon.

Sloppy Lentils

Sloppy Lentils (from: Fresh from the Vegetarian Slow Cooker)

3 1/2-4 QT. Slow Cooker

Cook Time: 8 hours

Setting: Low

Serves 4-6 (I think it make a ton more, but who knows!)

1 Tbsp. olive oil
1 med-size yellow onion, chopped
1 small red or green bell pepper (seeded and chopped)
1 Tbsp. chili powder
1 1/2 cups dried brown lentils, picked over and rinsed
1- 14.5 oz can crushed tomatoes
3 cups water
2 Tbsp. tamari or soy sauce
1 Tbsp. mustard
1 Tbsp. light brown sugar
1 tsp. salt
Fresh pepper to your liking

1) Heat oil, add onion and bell pepper and cook till soft, about 5 minutes. Add chili powder , stirring to coat.

2) Transfer onion mixture to slow cooker. Add everything else.

3) Cover and cook on low for 8 hours

I have frozen these in icecube trays for DS and have them on hand ALWAYS! He loves them. I usually end up freezing 1/2 this recipe even after eating it for a few days! It seriously makes a ton! This is great for people with top 8 food allergies!
