Roasted Edamame

Edamame or shall I say Soybeans, they used to be touted as the best health food about. But as with everything that is considered healthful to much of a good thing is bad. Can we not as Americans finally understand what the word moderation means and live our lives that way. So at anyrate ….I picked up some edamame to see if I could get Nat to eat them like she did pea’s since any vegetable lately is a taboo subject for her. But I guess that is a 3 year olds prerogative. She wasn’t into them…so instead of contributing to the compost pile I searched for a recipe and found this one…. Roasted Edamame…OMG talk about tasty, crunchy,wonderful feeling on the tongue and teeth. I will definitely do this again. They say you can eat them warm or cold, I haven’t tried cold yet but I imagine they will still be good.

Roasted Edamame

  1. Preheat oven to 375°F.
  2. In small bowl, stir together oil, basil, chili powder, onion salt, cumin, paprika and black pepper.
  3. Drizzle mixture over soybeans and toss to coat well. ( I actually pour it over them in 13×9 pan then stirred)
  4. Arrange beans in a single layer in a shallow baking dish.
  5. Roast, uncovered, for 12 to 15 minutes, stirring once, until soybeans begin to brown.
  6. Serve hot as a vegetable side dish or cooled as a snack.
  7. Refrigerate any leftovers.
